I purchased a case of yummy strawberries from Bountiful Baskets Co-op this past week. I also received a couple of delicious mangoes. So I immediately decided that I needed to create a Strawberry Mango Jam. It just sounded like something heavenly, and now that I have made it, I can tell you it is definitely out of this world delicious. I now have a new favorite jam.
Not a bad way to start my week, I must say. I am thrilled this made so many jars, though I can tell I am going to have to make more to feed my new addiction.
Here is what you will need to recreate my fantastic concoction:
3 lbs strawberries, crushed (makes about 5 cups)
2 large mangoes, pitted and chopped fine
2 TB lemon juice
1 package SureJell pectin
5 cups of sugar
Place prepared fruit in a large pot. Add lemon juice and pectin. Stir over heat until it reaches a rolling boil. Quickly add sugar and stir over heat. Boil for 1 minute more. Turn off heat. Skim foam from prepared jam.
Ladle jam into hot jelly jars. Wipe jar rims clean and seal. Process in boiling water bath for 10 minutes.
Yields about eleven 8-ounce jars.
Now go and get some bread, rolls, or biscuits to spread it on and enjoy!
