This is a yummy and very easy muffin recipe. It goes well as a side for soups and other comfort foods, as well as a great muffin for breakfast time. With the added addition of the oatmeal, it is also full of nutrition. Enjoy!
First, you need to grease your muffin tin. You can use non-stick spray, or keep it old school like I did and use shortening.
Now, put all of your dry ingredients, except the oatmeal, into a bowl.
Mix and sift the dry ingredients together.
Now it is time to add the oatmeal. Mix it in well.
Add your wet ingredients.
Mix it all up until everything is well blended. It won’t take long.
Fill the prepared muffin tin, each cup about 2/3 full. Now put it in the oven and bake for just about 15 minutes.
After 15 minutes, you’ll have a muffin tin that looks like this…yummy! Remove them from the muffin tin to cool.
Slice one or two open and slather with butter. Add some honey or jam if you want. I couldn’t wait, so I just ate mine plain. It was fabulous…I knew you’d want to know…
- 1 Cup Flour
- 1/4 Cup Sugar
- 3 tsp. Baking Powder
- 1/2 tsp. salt
- 1 Cup Oatmeal (any kind seems to work well)
- 1 Slightly Beaten Egg
- 1 Cup Milk
- 3 TB Oil
- Sift flour, sugar, baking powder and salt together. Add oats.
- Add egg, milk and oil, stirring just to moisten.
- Fill 12 greased muffin pans 2/3 full.
- Bake at 425 * about 15 minutes.
