Life has been a bit interesting around here and we aren’t always following my menu plan. But it is still a comfort for me to have a plan in place. It just helps.
We ended up having a family dinner again this week, so once again, my Chicken Fajita Enchiladas got changed. I will be making these soon though. I need a couple of pictures so I can post the recipe for you here. They are just really yummy! The reason we had another family dinner was because it allowed us to have some family time with Gary’s Dad. He has been diagnosed recently with cancer and it is all throughout his body–pretty much every organ is affected. It is not curable. He keeps talking about wanting to make it to 88, but as he is currently 85, it is not realistic. He most likely has a couple of months or less. I share this so you will understand if my meals and blog get really crazy here in the next little bit.
I made a really delightful ice cream yesterday. How does Pomegranate Ice Cream sound? I combined the things I liked from 3 different recipes and came up with my own. I’ll be posting the recipe a little later this week here on my blog.
