Boy, last week I didn’t do a menu plan since we were going camping with family, and I wasn’t in charge of the menu. We came home, and I had no menu to guide my tired brain. Next time I go camping, remind me to just plan stuff for when we get back, ok? It sure would have made my life easier, I’m just saying.
Tonight, for family home evening, we are going to go pick a bunch of apricots from a friend’s tree. Then I will be making jam this week in all of its yummy goodness. We love apricot jam around here. I made a batch earlier this year, and my hubby has seriously gone through about 1/3 of that in a very short period of time. If I want any for my shelf for this winter, I’d better make a bunch more. I’m glad I have friends who have apricot trees and just don’t want that many for themselves!
This week will also find me making more pickles. I have put up a couple of jars already, but those little pickling cukes are going crazy in our garden. This makes me happy, as we haven’t had a lot of luck with those these past couple of years for some reason. I’m excited to put up pickles. I am picky about my pickles, so it is really in our best interests for me to just make them the way I actually like them. They aren’t hard to do, but it sure seems like forever when you have to wait a couple of weeks for them to be ready. Once my first jar is ready, we will be good to go. I am currently out of pickles in my fridge, and I refuse to open up any when I’ll have my own first jar ready the end of this week. So tuna salad and things like that will be waiting until I have pickles in hand.
I’ve also got a bunch of broccoli to freeze and sugar snap peas to put up. Those peas have been just fabulous. I’ve eaten several by the handful and they are currently one of my very favorite snacks. I’ll be throwing some of them in our stirfry that we are eating this week and of course I’ll be doing creamed peas and potatoes again. My mouth is watering just thinking about them.

Popcorn Chicken, Tater Tots
Grilled Chicken, Creamed Peas & Potatoes, Tomato and Cucumber Salad
Teriyaki Stir Fry, Rice
Cabbage and Kielbasa with Potatoes
Grilled Porkchops, Baked Potatoes, Cucumbers in Vinegar
Fish and Chips
Family Dinner? Not sure what I’ll be taking this time.
