I missed posting my menu plan last week. Guess Labor Day got the best of me. I did have a menu planned and we stuck with it, so there is that.
Today I have been busy setting up a work schedule for myself, and that schedule will include my blogging. I have a topic assigned to each day, so hopefully I can stick to it and things will be more regular around here. I hope you like what I have planned here on Quiet Pandemonium. It should be fun.
This evening, I will be putting salsa on the stove to simmer overnight and then tomorrow I will bottle it and can it for us to enjoy later. We go through a lot of my homemade salsa each year, so it is always a priority item for the canning season. My recipe calls for processing it by a boiling water bath. That is standard procedure for tomato products. However, I have become hesitant over the past couple of years to do that, even though it is technically safe to do so. I have chosen to pressure can it the past 2 years and it has been just perfect and I no longer worry about enough acidity. I have felt that the acidity of the tomatoes have gone down over time and I really don’t like adding lots of vinegar to bring the acid level up. So I have just personally moved to pressure canning it. My mother still water baths hers and it seems fine. I am just super cautious. LOL! Anyway, once I have that completed, I will next move on to making my sweet and sour sauce. We love that as well and it is next on the list of canning priorities. And I do choose to water bath that one.
Today is cold and rainy, so I planned a warmer meal for tonight. That hint of fall is in the air and soup just seems like the perfect meal tonight. Here is what we are planning to eat this week…
