Well, as usual, I didn’t use a couple of the menu plans I had. But that is ok. It is better to have a plan and change your mind, then to be trying to figure out what in the heck to fix in the first place.
This week, I am only re-using one of those plans though, as it is one of my son’s favorite things and we didn’t eat it yesterday. So I am fixing it today. Yesterday, I had enough leftovers from Saturday night’s dinner, that I just took a day off from the kitchen. It was kind of nice. I love to cook, but a day off here and there does the busy mom’s soul good.
Here is what we are eating this week:
Monday- Roast and Veggies
Tuesday-Spaghetti and Meatballs, Ciabatta bread, Mexican squash (If you don’t know what Mexican squash is, it is similar to zucchini. I got it in my Bountiful Basket order on Saturday.)
Wednesday-Baked Chicken, baked Hubbard squash, green beans
Thursday-Pork Loin Roast, Baked Potatoes
Saturday-Chicken and Dumplings
Sunday-Most likely we will be having a family dinner this day. I will be offering to take a Pumpkin Pie Pudding that you make in the slow cooker. I’ll try to post the recipe then. 🙂
