Things were a bit crazy around her this past week. My mother ended up in the hospital and that threw a lot of things off. She is coming home today, but will be on oxygen for the next while. They hope maybe only 1 to 2 months. Anyway, my dinners will be a little bigger as I add in feeding my parents each night as well. They will get lunches from the Senior Center, and usually do cereal or something easy for breakfasts. Yesterday, we didn’t have the planned pork chops and instead did a baked chicken. It was yummy. But you’ll see that we scheduled the pork chops for tonight instead. Can’t let a good meal plan go to waste and all…

My Weekly Menu Plan:
Monday: Pork Chops, Sauerkraut, Roasted Brussels Sprouts
Tuesday: Meatloaf, Baked Potatoes, Green Beans
Wednesday: Santa Fe Chicken Packets, Baked Potatoes, Salad
Thursday: Slow Cooker Chicken Cheddar Bacon Soup, Salad, French Bread
Friday: Chinese Takeout–though I may just make it at home instead
Saturday: Tuna Casserole
Sunday: Tamale Pie, Salad (This was SUCH a hit. The boys demanded I make it again this week. I’ll take pictures this time and share the recipe here soon.)
