Today was the first day of my 2010 Gratitude Challenge. It has made me so happy today to focus on the things I am thankful for and read about everyone’s blessings. I am so looking forward to this all month long. If you aren’t sure what I am talking about, I started a meme for the month of November where you post one thing you are thankful for each day. We had a bit of a financial crisis this past weekend that literally wiped out our bank account for this month. So we are going to be doing a pantry challenge for the month. I will only be going to the store for milk and purchasing my Bountiful Basket this month. Well, except for Thanksgiving. I will purchase a turkey for then. Otherwise, that is it. (This money will all be pulled from my small savings account.) I have everything else for Thanksgiving already in my pantry. So even though this could be serious, it won’t be a huge deal. I just have to make sure I make absolutely everything I can. And our pantry and freezer are well-stocked, so I have the tools.
Here is what we are having for dinner this week:
Monday— Baked Chicken, Baked Acorn Squash, Green Beans
Tuesday– Beef Teriyaki Stirfry, Rice
Wednesday– Fish Sticks, Macaroni & Cheese
Friday– Hamburger-Rice Casserole
Saturday– Beef Stew and Homemade Biscuits
Sunday— Grilled Pork Chops, Baked Potatoes, Green Beans
