Well, here it is another Monday, another menu plan. We didn’t do some of what was planned for last week, so you will see those repeated again this week. I can’t stand not using a great dinner plan.
Last week I had the opportunity to join a food co-op in our community through Bountiful Baskets. Although there were some other items available for purchase, I opted to only buy the fruit and vegetable basket in order to try it out. I have to say that I was completely thrilled at what arrived for me to pick up and for only $15 too! It was definitely money well spent and we will continue to participate in the co-op as it is available. Currently we can only get it every two weeks. But there will be another drop location in my community soon, and they plan on having it on the opposite week. So there is the potential that we can get this every week. I really hope so!
I purchased last week’s basket on Monday and I was able to pick up my basket items on Saturday morning. We got 4 large artichokes, a large head of romaine lettuce, 4 tomatoes, 2 large cucumbers, a small bag of radishes, a bundle of fresh spinach, 3 containers of blackberries, a bag of apples, 6 bananas, 10 kiwi, a cantaloupe,and a honeydew melon. I think that is all…I might have forgotten something. Around here, for the same amount of money, I might have netted the kiwi, a cucumber and a head of lettuce if I was lucky, and nowhere near the quality. And I am NOT exaggerating.
Later today we are going to go asparagus hunting down “No-Tell-em Lane” and we will have that for dinner this week sometime as well. I love all of this fresh produce!
Ok, here is what I have planned for dinner this week:
Monday–Crockpot Lasagna, French Bread, Salad, Blackberry Cobbler
Tuesday– Grilled Steak, Fresh Asparagus, Baked Potato
Wednesday— Beef, Bean & Cheese Enchiladas with Lettuce, Tomato, Sour Cream and Salsa (We didn’t have these last week, and I think it would be perfect for Cinco de Mayo!), Fried Ice Cream
Thursday–Pizza, Hot Wings, Bread Sticks, Cheesy Salad
Friday-Super Nachos, Blonde Brownies
Saturday-Tater Tot Casserole
Sunday–It is a tradition in our family to have Shish-kabobs on Mother’s day. So we are having those will marinated beef and all sorts of yummy veggies. I even think we might go crazy and have some homemade ice cream that day as well.
