This week we are going camping on the mountain. So even though I will be cooking in the great outdoors, I thought I would still share my menu plan. I mean, you really have to plan when you go camping anyway, right? We will actually be returning home on Thursday, so the menu will reflect that return to real life. I’m not going to list desserts these nights, because it is just understood that we will have S’mores most nights. We like to use the Fudge Stripe Cookies for our S’mores. So simple and the chocolate melts just right. And what is camping without roasting marshmallows over the fire anyway? I guess I should add that we are going to make a cake in a dutch oven too.
Here is what we are eating this week:
Monday— Hamburgers and Hot Dogs, Baked Beans, Chips
Tuesday-Dutch Oven Meal–Cabbage, Kielbasa, and Potato
Wednesday-Roasted Chicken, Butternut Squash
Thursday– Lasagna, French Bread, Salad (I have a lasagna in the freezer, so this is what we are going to use that day.)
Friday-Elegant Chicken–grilled, Summer Squash, Salad
Saturday-Grilled Steak, Shrimp, Salad, Summer Squash (We did grab dinner out last week on our Anniversary, so we are having this now.)
Sunday–(This is my birthday, so it is subject to change) Pork Chops, Sauerkraut, Green Beans, Cake, Ice Cream
