This week is the first menu plan of the new year! How fun is that?!
I am going to continue this meme as it has helped me tremendously this past year. I love not having to figure out what is for dinner the same day I am going to cook it. I hate trying to figure it all out right before dinner. It is just so much nicer to do it all in advance and then look at my menu and cook accordingly. It makes everyone in the family happier.
I was finally able to order my Bountiful Basket today. I have missed the co-op these past two weeks as they took off for the holiday season. I have still had fresh fruits and veggies in the home, but the co-op saves me so much money. I do know that we are eating better and are more healthy since it came into our lives. That makes me happy and I feel better about what I am offering to my family for meals.
We won’t get the new produce until Saturday morning. So until then, I will be anxious to know what will appear in my basket. It is like having Christmas each and every week. And the surprise is usually wonderful. I do know that I will have fresh tortillas waiting for me as I ordered those as an extra this week. We were out and we really love the large ones to make pizzas. The tortillas are thin and they make the absolute best crust. Add in my homemade pizza sauce that I canned this summer and we have pizzas to die for around here. So we can’t wait for Saturday to arrive!
One thing I am trying to do for all of the month of January is to eat a fresh orange each day. Why? Well, I have a case of them as they are in season right now. Also, I like them. But I have a nasty habit of ignoring them if they aren’t convenient. Oranges need peeled. That isn’t convenient. I could just slice them and eat them that way, but I prefer to eat them all peeled and segmented. So I am going to make an effort each day to actually eat them. So far, I am happy to say I have met that goal. Of course the month is just starting. But at least I haven’t screwed it up yet.

Monday— Leftover Turkey Dinner (from New Year’s Day)-Turkey, Stuffing, Mashed Potatoes & Gravy, Chocolate Cake
Wednesday– Turkey Pot Pie
Friday-Fish Sticks, Mac & Cheese, Baked Butternut Squash
Saturday– Lasagna, French Bread, Cheesy Salad
Sunday–Roast & Veggies
