This week is my Dad’s birthday. This will be the first one he has without my Mom. I have asked him and asked him what he wanted for his special dinner this year. I wasn’t sure he was going to let me make one for him. But he finally requested “fried chicken and lumpy potatoes & gravy like your Mom used to make me.” So that is what we are having. Dad has said for practically the whole 49 years they were married that he married her for her fried chicken. Lumpy potatoes are simply cut up potatoes that are boiled and left in the chunks instead of mashing them. I hope I can make him happy that day.
I did bring a smile to his face yesterday. I brought him a case of fresh peaches and told him it was an early birthday present. He loves fresh peaches. He was pretty happy Sunday morning when I dropped them off after picking them up. I had ordered them several weeks ago and yesterday they were here and ready to be picked up. They are super yummy and we are enjoying them as well.
This week I will be adding additional sides to our meals from the garden. I won’t be listing them all, but we will be using them. We have some green beans ready to be eaten, summer squash, swiss chard, kale, and several other fresh items that are just begging to get into our mouths and into our tummies.

Wednesday: Dad’s Birthday: Fried Chicken, Potatoes & Gravy, Corn on the Cob, Cake & Ice Cream
Thursday: Crockpot Enchiladas
Friday: Chicken Fajitas
Saturday: Chicken & Stuffing Casserole, Salad, Corn on the Cob, Brownie Sundaes
Sunday: Roast & Veggies
