One of the foods that I am the most picky about is coleslaw. It just has to be done right and let me tell you, just like potato salad, there are some scary variations out there. I have been making my own coleslaw for the last few years. Mainly because when we moved to our small town, there wasn’t a decent one to be found. So since we like coleslaw, I had to find a way to make it happen. What I am going to share with you today, is the fruit of my labor in the search for a simple, but tasty coleslaw. I am often asked for this recipe, so I feel confident in sharing it with you. You won’t believe how simple it really is to make, and how yummy simplicity can actually be.
Let’s get mixin’!
Dump one bag of coleslaw mix (around 14 oz) into a large mixing bowl. Or you can shred about 6 cups of cabbage and a large carrot. For me, this depends on how much time I have and if I happen to have fresh cabbage available in the garden.
Sprinkle 2 Tablespoons of Sugar or Splenda over the coleslaw mix. I am literally using a Tablespoon from my silverware drawer. Use one of those–NOT an actual measuring spoon.
Add 1 1/2 Tablespoons of White Vinegar. Yes, I am using the same Tablespoon. Trust me…this works. Fewer dishes too.
Add 2 Heaping Tablespoons of Miracle Whip or other Salad Dressing, or Mayo. I don’t like Mayo. So I use Miracle Whip. I am a purist this way. Add Salt and Pepper to taste. I usually just do a pinch of each. But this is totally to your own preference. Honest.
Mix it all up. You might not think you have enough of a dressing to actually cover the coleslaw mix. You do. Just stir it up and let it sit for a few minutes. You will find it just about perfect.
Serve it and enjoy! You will notice my elegant plate and fork. We are really fancy around here.
RECIPE: Fresh Coleslaw
1 pkg Coleslaw Mix (about 14 oz), OR 6 Cups Shredded Cabbage and 1 large Shredded Carrot
1 Tablespoon Sugar or Splenda
1 1/2 Tablespoons White Vinegar
2 Tablespoons (Heaping) Miracle Whip or Mayo
Salt & Pepper to taste
1. Dump Coleslaw mix into a large mixing bowl.
2. Sprinkle Sugar or Splenda over the Coleslaw mix.
3. Add White Vinegar.
4. Add Miracle Whip or Mayo and then salt and pepper to taste.
5. Mix well and let sit for a few minutes. Serve and Enjoy!
