One of Chandler’s favorite meals is anything with chicken and stuffing. He would live on the stuff if I would let him. So it just made sense that I would take 3 minutes and show him how to make this meal. He did most of this himself and he was so pleased with the end result. I admit that I didn’t mind not having to really cook anyway. But then, cooking in the crockpot or slow cooker never really seems like work in the first place. The best part about this meal? It doesn’t take that long in the crockpot. You just need 4 hours on low. And if you are in a hurry, about 2 on high. Easy.
Oh, on another note, I’ve added in a little extra chicken before without any problems whatsoever. It’s forgiving that way. I’ve also doubled this recipe with success when we have had company for dinner. It seriously is one of the easiest recipes and it is one we love. A lot.

Crockpot Chicken and Stuffing
4 Chicken Breasts, thawed
1 Box Stove Top Stuffing Mix
1/2 Cup Sour Cream
1 Can Cream of Chicken Soup
1/4 Cup water
2 Cups Shredded Cheese
Spray crockpot or slow cooker with nonstick spray. Make sure bottom and sides are well coated. This will make your crockpot or slow cooker much easier to clean. Trust me on this one.
Place chicken breasts in the bottom of the crockpot. Pour dry stuffing mix on top and spread evenly.
Mix sour cream, soup, and water in a bowl until well combined. Pour over top of dry stuffing. Spread until even.
Sprinkle cheese all over the top until covered.
Cook on low for 4 hours or high for 2 hours.
