I made a new recipe today and it turned out so well, I decided to share. We will be making this one again and again. This is a wonderful chowder and we really enjoyed it. It is a little different from my Vegetable Cheese Chowder. I don’t have that recipe listed on my blog yet, as it will be published in the fall issue of TOS Magazine. I’ll post that one here sometime after that issue comes out.
Here is my new recipe:
Brocolli Cheese Chowder
1/4 cup butter
1/4 cup all-purpose flour
1 small or 1/2 medium onion, chopped
3 cups chicken stock
3 cups milk
1/4 tsp salt
1/2 tsp pepper
1 1/2 cups diced potatoes
1/2 cup diced carrots
2 cups chopped broccoli
1/2 lb (8 oz) processed cheese, shredded
1 1/2 cups shredded Cheddar cheese
Bring a pot of lightly salted water to a boil. Place the broccoli, carrots, and potatoes in the boiling water and cook for 2 minutes, or until just tender. Remove from heat, drain and set aside.
Melt the butter in a large pot over medium heat. Add in the chopped onion and saute until tender. Mix in the flour. Reduce heat to low, and cook, stirring constantly, about 2 minutes. Mix in the chicken stock and milk. Add in the salt and pepper. Bring to a boil. Reduce heat to low, and simmer about 10 minutes.
Gradually mix in the processed cheese and the Cheddar cheese into the pot until melted. Mix in the broccoli, carrots and potatoes. Continue cooking for about 5 minutes.
