We just had this last night and it was so heavenly, I thought I would share the recipe with you. The great thing about this pie, is that you could take away the bananas or leave them in if another combination sounds good, and then change the blackberries to something else. I would definitely try raspberries, sliced apricots, blueberries, strawberries or peaches. You could even use 1 1/2 cups of crushed pineapple for a tropical flair.
You will need the following items:
1 1/3 Cup Sweetened Condensed Milk
1/4 Cup Lemon Juice
1 1/3 Cup Fresh Blackberries
1 Large Banana, sliced
1 Baked Pastry Shell
1 Cool Whip Light, 8-oz container
Arrange sliced banana on prepared pastry shell. Combine milk and lemon juice and stir until thickened. Fold in 1 Cup of blackberries and then pour into pastry shell on top of bananas. Cover with whipped topping and garnish with remaining blackberries. Chill. Makes 1 9-inch pie.
